Yall are both right. It's by definition high level since it's 3rd generation, but everyone calls it low level because it's lower than nearly all other languages. No one is making large projects in assembly anymore. Roller coaster tycoon is the exception.
Learn the functions, rules, and expected functionality of these projects, then just try to build them. Go in with no help at all, and look up what you get stuck on. For example, for a casino game, you know you will have to make a program which takes in input from the user, manipulates the data, and outputs an expected result depending on the data received and the rules created(Which generally has a random result). Usually, you will also need to keep track of a user in these casino games, so you will need to create a user profile that can accept transactions, keeps track of the transactions, has security to keep the users information private, and allows the user to withdraw. Each of these above mentioned problems are problems you tackle one by one, and each has smaller problems of their own. Sit down, think it all out, break everything into it's smallest components, then tackle each of these problems one by one. Programming is generally not something you just do on the fly and expect things to just work unless you are working on something you know exactly how it works and how it is composed. The entire field is just one big puzzle, broken down into smaller puzzles, which break down into smaller puzzles. There is no right or wrong way. Just code what you can, make it work, then look at what you have coded and look for alternative ways. Look up information about what you don't understand and try to break it down in a way that makes sense for you. I would say lookup only the current problem you are on and not the program you wish to make if you want to learn deeply. That's the only way to move forward while actually getting better at understanding, not just memorizing 😅.
Also, if you don't know what to lookup, definitely take advantage of ChatGPT. You can ask it to help breakdown the program you wish to make, then you can ask it what each of these components are comprised of as well. While it may not be able to teach you everything you need to know, it can definitely point you in the direction you wish to go in order to learn.
