Africans are much more price conscious than Europeans or North Americans. The fine dining industry is a very volatile one. Chefs change jobs quickly, standards rise and fall relatively quickly. Michelin guides are also typically funded by a countries tourism board. It's up to a countries government to decide whether its worth it to get Europeans to tell everyone whether African food is good or not. In Africa we simply rely on local wisdom on which is a great place to eat or not. And tourists in Africa don't seem to care either. They get good food, and good quantity of food, at great prices. In Africa, the main course is usually more than enough to fill and satisfy someone. People don't really go in for a three course meal, starters are often shared and desserts seldom ordered at the same place as the mains were. It's just a different dining culture here.
the simple answer is that the michelin critiques work in a select number of countiries usually where the elite hang out. adding countires to thelist requirs mony time and recruting of new critiques.
Because Africa is huge with many countries and diverse and sophisticated cuisines, and because some of the food and some of the restaurants are awesome.
Wonderful food in Morocco, Algeria, Tunisia, Cairo, West Africa, and South Africa. They should work harder on Africa. Keep in mind that Tokyo has more stars than Paris, so M is not totally eurocentric.

Gordon Ramsay has been awarded 17 Michelin Stars in his career but currently only holds 8, as he recently received 1 Michelin Star for Restaurant 1890 in February. This video was in production at the time so we missed adding in this additional star to the video
Too many people place too much attention to whether a restaurant has a Michelin star/s or not. Illis is a somewhat new addition to the high end restaurant scene. It has to the best of my memory not been awarded any Michelin stars yet. However, that may be coming but as with all restaurants, it's a journey and they first need to be visited by food inspectors from Michelin before that will happen and such a visit is not always just around the corner.
It has no Michelin star at all,and is not Bib rated or even mentioned in the Guide yet. Someone worked at Noma and opens a different place means you start from scratch and it has nothing to do with where you worked etc. sorry
Fine dining? Nah! not for me. little plates of lettuce tiny pieces of fish or meat and table spoon of veg with some sauce you can't pronounce. Food snobbery. Give me a med rare fillet steak and peppercorn sauce any day of the week! Ponce food is for the stupid rich who know nothing of food who are out to show off. OH! @@worldeats23 indeed I mean some cafe in my city that has decent food I must say but people there stay in Line for a beautiful view but I don't like outside so it's an L for me
