There is a chemical in these greens that causes the bitterness. That chemical is water soluable. If you blanch the greens for a minute or two, some of that chemical will leach out into the boiling water and help to reduce the bitterness.
i have bitter kale, which is labeled sweet kale. is it bc it is too old? i want to make quiche with ham and cheese. should i cook down kale first in rice wine vinegar or lemon first? TIA

Great info. I thought I was eating less servings because I was measuring with a Pyrex Measuring cup, not the one in your videos. Is it safe to say that an athlete with high demands on the body would require 10-15 servings of the good veggies and fruits along with a organic diet?
