Don't use red wine after boiling your chicken stock. Because in french cooking alcohol is added and reduced before adding any kind of stock to the pan.
Wrapping the potato in foil makes the skin soggy because it holds in moisture and basically steams the potato so you’re eating a giant boiled potato not as good as a proper baked potato
If youre making tar tar, use this recipe but add finely diced shallots, chopped capers, fresh dill, fresh taragon, and fresh parsely.. let sit for 2 hours and you havevl such an amazing tar tar.. add 10 parts tar tar to 2 parts american mustard to 1 part ketchup and youve got big mac sauce but so much better
