Thank you for bringing that up! You’re right about olive oil having a lower smoke point. However, many chefs use it for searing because it adds a rich flavor. It could be better to use tallow but not a crime to use EVOO. Just be mindful to use it at the right temperature.

We think, using ACV might not be essential when using an Instapot, as the high heat is usually sufficient to break down the bones and release collagen.
Little tip. If no twine, keep an eye on the end of legs and wings. If they start to get dark you can cover with foil. Works like a charm. Been cooking 64 years and owned a resturaunt.
That's a clever shortcut! Using the microwave does indeed make the process quicker. As far as I know, microwaved sweet potatoes are softer and moister. I personally love the golden-brown color of roasted potato cubes.🙃
