Idk if you’ve eaten there yet, But I saw in a different video that you like Cajun food and so I’d highly recommend Mike’s Place, for a specific order the Blackened Chicken Alfredo is delicious, and a small thing but they my favorite ranch dressing for their salads of any place here in Conway that I’ve tried

The excess of flesh on his face is disturbing before we even get to his attitudes and behaviours. As Elon Musk said, the media is a very poor judge of character. They gave us Jimmy Saville, Adam Britton, Steve Irwin (enslaves animals in a zoo for profit, got everything he deserved by pulling one animal tail too many), and - in the world of chefs, where pretentious, bourgeoise nastiness abounds - Salt Bae and Gordon Ramsay.
a Po Boy is NOT sold on a baguette; it is sold on NEW ORLEANS FRENCH BREAD, it's very specific and different from a french baguette it is chewy not crispy on the outside but with a fluffy weightless yet substantial crumb; you cannot produce it elsewhere because it's made in the specific pressures and humidity found in New Orleans, and the only thing other than that that's REQUIRED for it to be a po boy is blue plate mayo but typically lettuce and tomato with whatever protein you want. I would personally put it in S tier, but A tier is perfectly acceptable. I am upset with your Muffaletta placement personally, but I understand it if you haven't had a HOT muffaletta

They missed the perfect opportunity to call the place "Spec Ops: The Lounge" in reference to the videogame. But for serious, it sucks to see them fail. I get that with the current day and age of gaming and how anti-social it is, a social gaming space just can't get a foothold and succeed. Maybe if it was 20 years earlier when LAN parties were prominent, things could've gone different.
I recommend eating outside of the french quarter for much better Nola cuisine and cheaper. except verti mart the spicy muff and hot sausage are my go to items.
This is why Julia should always be held up as the highest icon in the food world, not Gordon or whatever schmuck is selling scented foam and gelatin cubes at the most recent Michelin 3-star. I mean granted, I get that doing something perfectly and being able to repeat that perfection is impressive and profitable, but good food should satisfy the appetite and the soul. When I eat something delicious I wanna feel comfortable, which means feeling confident that no one was scarred for life in the process of creating it.
I think the worst part is, normal people work in kitchens where the chefs can't even spell Michelin. It's one thing to work in a high stress environment where the standards are exceptionally high, where all your comrades are complete assassins at your craft. It's another thing entirely to work in a similarly high stress environment, where virtually everyone has little tradecraft and zero F's to give.
The last minute of this video gave me chills. You summed it up well, I hate to admit. I love what I do, but I despise cooking for ungrateful rich assholes who use my work and effort as clout but never seem to care about it as much as I do. Its not all like that- You meet so many wonderful people in this industry, whether it be the public or your teammates but uuugh. Ive worked places where I got to taste food id never be able to afford myself and its... A weird thought, and place to be in.
As someone who has worked the front and back of house... The Bear gives me ptsd and I love it like a masochist. I'm just stoked that Lip got his own restaurant. ( sorry for the shameless reference)
The Bear is just too real. 30 years in professional kitchens and I had a panic attack watching the 1st season and couldn't get past the first episode of the 2nd season without feeling another one coming on... it's a fantastic depiction of the life but, I didn't want to relive past agony.
