Looks delicious! Growing up on the family farm, my grandfather planted yellow field corn. My mom would cut the corn off the cob, blanch it and freeze it. In addition, she would blanch and freeze whole ears of corn. When my mom cooked the frozen corn, it tasted like fresh corn. Since cutting corn off the cob takes time, I buy the frozen whole kernel corn to fry. I add salt, black pepper, corn starch and a little milk.

Great and much needed video,also you used a nice skillet you should use plastic or silicon to keep from scratching the coating or use a cast iron skillet which would lessen your cooking time

My family's recipe uses a bit of cinnamon, nutmeg, and mace with the sugar. Ours also poaches the rolls which are more like dumplings in heavy cream. But the end result is superb. It's a rich dessert. The history of the dish is that it was a desert that could be made on demand at any time of the year with pantry staples.

@KatrSayet You do have to be careful of eating too much of everything. I do know a few people who eat a lot of corn and have been for years and have no arteries issues. I only make fried corn, maybe about once or twice a year for the holidays, so I know it's not an issue here. Just like my doctor warned against eating too much red meat. I grew up on fried corn. My mother used the exact ingredients your mother did. Another way we used to eat fresh corn was for breakfast. First, she'd fry up the bacon we were going to have and put it aside. Removing all but approx 1/4 tsp of the rendered fat, she then took fresh corn off the cob (about 2 ears) and added it to the skillet with a little salt and pepper. After sauteeing for about 6 min, she would crack open a dozen eggs (for 6 people) add to the corn in the skillet and scramble together until eggs were fluffy and done. She always made biscuits from scratch and whenever we saw this dish with the biscuits and bacon on the table, we knew it was going to be a good day! To this day, even if i don't always have fresh corn on hand. I fry and scramble my eggs in a little bacon fat. Talk about delicious!!!!😋

The sugar can be cut down a lot and still be just as good. It was a requested dessert from one of my subscribers. I hadn't made it in years and years. I make mine exactly like this minus the sugar my corn is usually super sweet and I cook the bacon grease onions and butter together...very good no shortcuts thanks for posting 😊
