there is nothing Indian about it, none of those are Indian vegetables, Kanji is mostly made of strained water from Rice

In goa we boil par boiled rice,and drink its water is called kanji we eat it specially when we are sick

I never saw a purple carrot anywhere in India, but the orange ones are bright orange and delicious. Hope this recipe works without the purple.

I love this video. My wife and I tried a first batch but mistakenly bought and used something more like horseradish root. It was not pleasant so I dumped it and used the beetroot. I never saw bubbles of fermentation but then thought to quickly add more salt to help the process. Still no bubbles but I measured the ph after a few days and it was 4.01. So I let it go for the week. It tastes good but I keep worrying about a slightly sulfuric smell. Is that normal? I have been enjoying it for several days now and no ill effects. Could I have gotten something wrong?

Not trying to pick on you, just my 5 cents on how i see it: If you're trying to keep everything sterilized - you're doing a bad job by using a wooden stick that's also darkened around the tip which indicates it's being used constantly also, mortar and pestle are actually THE FANCY cookware in western cultures where blenders are widespread and mortars are far and away

Smells NASTY like sewage smell - don't make it, it does not worth the efforts. Even the person who made this video will agree. FYI, I followed the steps after three days I was keeping it in the fridge, still sewage smell.

So you made pickle and called it kanji 😮. In southern part of India, we would put the same and no water but cut mangoes or vadau mango and nicely shake it and keep it aside. It will make its own water and that’s vadau mango pickle. If you finely ground raagi small millets and pulses with rice and keep it in a storage box. Take two spoons of it nicely mix with water and bring it to boil. Switch it off add sugar or jagery and milk. This is called kanji.

You can skip mustard seeds altogether. You could add a few allspice seeds, caraway seeds, coriander seeds, a couple of bay leaves, cloves, etc. Most seeds that you like the flavour of would work. I actually use all of the seeds I mentioned above, but different people have different preferences 😊

Could you just lower the ph with apple cider vinegar instead of using salt? Maybe just a tiny bit to help kick things into gear.
