I would say that this is a great way to cook something in general if in a survival situation where you don't have electricity or gas and perhaps it's too cold to cook outside
From my experience cooking hams in both conventional oven and my brick oven, it’s the texture that is better and I can only think that this is because the cooking process starts off a lot slower when cooking over candles compared to conventional oven. As already commented, no gas or electric needed.
Can’t help thinking a slow cooker would be better,, ? From a less hassle, point of view, ie slow cooker with half inch water, then put your foil wrap in, either in water or on trivet? Could even foil seal the lid,
Definitely you could, I’ve cooked loads of hams in the oven at 85deg for 8 hours. This is just a different way of cooking and all you need is some bricks and a few candles, no electric or gas. It is a bit of an art but once you know your ‘oven’ it’s really quite easy and safe.

It could have done with just 3 candles each side right from the start, yes 110c is a bit high, normally I only cook to a max internal temp of 85 and 95 oven temp. It still turned out lovely.
