I watched this a few days ago, then today searched for it to show someone else, and it was very difficult to find. Please add either the word (loomi, am I spelling it right?) or dehydrated lime, to the title.
Im lIbyan and that chilli at the end is a MUST and a libyan Custom , so 8/10 and you missing 2 Points for Missing The Potatos they can cook with the Meat and you Forgot the Garlic at the end with the Green Chilli But hey Great Vid :D
In Syria, we add tomato, cucumber, onion, and chili (sometimes parsley and fresh mint). For the dressing, we use salt, dried mint, Aleppo pepper, lemon or vinegar, and olive oil usually served alongside food. But if you're making a salad to enjoy with bread, skip the lemon or vinegar and the parsley and add cumin to the spices (along with lots of olive oil). Then eat it with Arabic bread... uffff, so good!

I tried the tangy one today with the lemon juice/tahini/mayo/garlic and tried it with a few carrot pieces, very good! I look forward to trying the others. Normally I only use the tahini for baba ganoush. Good to have other things to do with it when I don't have eggplant.
I never knew this was a thing people did as a spice! I used to keep citrus around too long all the time, until they were light, hollow and dry. I like to make tea with them, or put them in soup broths. The lime ones definitely are more interesting that oranges, but lemons make a nice version too
