Can I ask you a question? Do you mix your flour with cement? I’m kidding, though I’m asking because with the quantities of water flour and butter you’ve written down, my dough was nowhere near as hard as yours, i had to add 15g of flour and then constantly flour my bench because it was supersticky. Yours look like a 50% idration to me. That, or you’re using a super absorbent flour. May i ask the protein content of the flour you used?
@@savored thanks! Since I was quite sure that the problem was in the flour type I’ve remade the dough using bread flour that i also kept in the freezer before using it. Way better final structure in the puffed pastry, and it wasn’t a pain to knead.. all the liquid got absorbed just fine. I suspect that what you call “general purpose” in the recipe, is in fact some kind of high protein, bread flour. Anyway, i saved this recipe and i will keep using it, to my taste it is the best recreation of the texture and taste of the original pastéis. Thanks a lot and keep baking ✌🏻

I made it last night. I replaced Thai red curry with green one, which I have available at home. I added lime at the end when serving instead of during cooking. It was so good with garlic breads. My husband gave 2 thumps up. He asks if we can bring this dish to an upcoming party. Thank you for a great recipe and TIPS.
