Can someone tell me what is light and dark soy sauce? Is this referring to soy sauce with less sodium? I bought kikoman soy sauce lite. Do i need to get a different soy sauce as well?

How to make it mild to medium heat? I'm slowly getting used to eating spicy slightly hot foods. One day, I'll be able to eat spicy foods without worrying I will have to eat either a lot of sour cream or a mouthful of sugar 🤭, neitger of those options sound good to me 🙃❣ Thank you in advance to whoever replies 🥰❣
I usually boil my potatoes w the skin on cut in 1/2 - i think they maintain more potato flavor & it helps me get things going quickly by not having to peel & the skins slide right off afterwards. ❤
