Korea and Qatar did compete in the CONCACAF Gold Cup as invitees and the 2025 Gold Cup will involve invitation to 1 or 2 AFC nations. Unfortuntely, AFC Cup has too many nations for a US/Mex invitation to fit in. The US supporters constantly complain that the US doesn't have enough exposure to more nations to compete against so your idea of a "Mickey Mouse" tournament is something I advocate for. The womens team holds such a tournament on a smaller scale. But offering a chance for a trophy and a suitcase of cash for AFC nations plus USA/Can/Mex would def work

Honestly, I think a qualifying tournament for the FIFA World Cup between these nations is the most likely chance the North Americans, Africans, South Americans, Asians, Australians and New Zealand would play each other I big cup tournament. It's a catch-22 for Spurs: Champions League AND a likely Arsenal Prem win or no Champions League, less money, no opportunity to improve the squad BUT deny Arsenal the title. Worse would be a draw as Spurs miss Champions League AND a likely Arsenal Prem win. Also a catch-22 for Arsenal because a Spurs win or draw means a likely Prem win for them. Spurs lose and it's a near-guaranteed City Prem win. But for me the North London Derby is the 2nd biggest Derby game in England behind Man Utd and Liverpool.
