I'm an engineer and was absolutely blown away by the cleverness of the design for extracting the cassava juice with gravity and body weight. I'm also amazed by how they use all of the cassava without waste.

Chinese are remarkably resilient anywhere in the world. Their hallmark of hard work, perseverance and patience. That explains why there are Chinatowns all over the world. It is worth a mention here about the Jews. They were small in numbers but got their small strong community built by not by sweats and blood but through easy money drinking poor people blood through money lending. Immoral.
You cook pepper pot in a pressure pot, a spacious pot so everything will have enough space to cook. For me I do not approve of this cooking. I have seen my mom , and my whole family making pepperpot the real old fashion way but never like this so called way. Watching from plaid ace .
Therr were only 300 women who came with the 2500 male workers. The rest of the men took local wives and that is how many trinis, including self identifying "afro" trinis, also have chinese admixture.
