Pectin jelly candies have a very tender texture, that I always thought would be very suitable for the Asian palate. In 25 years in Asia, I have been trying to convince many companies to look into them. I hope you have more luck than me. May be I was just too early. The machine works very well. I see all the moulds have same filling grade, and the product are nice clear. What are you doing with them after release from the mould? Sugar-coating?
