One spatula “technique” I see SO MANY VIDEO decorators do, is use their pallet knife backwards while spreading icing, meaning they hold what is considered the top side of the spatula (pallet knife) against the cake to spread and smooth. It somehow works for them but drives me straight up a wall.
Amazing video! When someone is proficient in something it’s often hard to remember the trouble spots when first learning. This video will be sooooo helpful next time I make a cake.

I see loads of professional cake decorators putting the palette knife up and down after piping, or straight on with the scraper after the piping and they have super smooth sharp cakes? 🤷😉
It’s important to note there’s not one right way of doing things. This video is aimed for people who are learning and through teaching students these are my tips for those to correct their mistakes! If someone can work in a different way and get amazing results then I would never correct them 🫶🏼🩷
I love that she demonstrates the WRONG way to do something, the results thereof, then the RIGHT way. So many videos just show the right method. Just discovered her channel (subscribed, of course) Will be binge-watching for a while. sidebar (totally unrelated): her Aussie accent helps...LOL
