I think the ground beef thing isn't entirely wrong - I don't know about beef, but blending vegetables reduces some of their nutritional value (i think mainly fiber). Could be that beef is similar

Dude if you are chipping Kai Shuns you aren't sharpening them correctly. They are amazing. I was telling another guy on here, I use a Kai Shun paring knife to shave for years now. Don't use a wheel on them use a whet stone.
