This is all wrong. These kind of chefs are a major problem for India and the world at large. Reinventing and redefining the brilliance of Indian cuisine with the rigid and purposeless pretense of French gastronomy combined with the complete and utter insanity of the fashion world is destroying Indian cuisine and is an act of great disrespect. We need to put a stop to this immediately and guys like this should be ridiculed, not put on a pedestal. As a Desi I’m appalled at the foolishness of people idolizing these unrecognizable concoctions and calling it cuisine. Understand that the most beautiful presentations have already been executed hundreds to thousands of years ago with little to no changes in the great civilizations of the world. This is because no further improvement could have been conceived. Changing for the sake of change without improvement is a form of communism, liberalism and homogenization of all people’s of the world Into some unrecognizable hodgepodge where the west sets the standard of sophistication. The joke of it is India and Asia have produced much more sophisticated cuisine with thousands more ingredients spices aromatics etc. Lucky to this day most people do not like this kind of food and these restaurants only last a few years before the fizzle out.
I agree the $0.80 masala dosay at CTR restaurant in Bangalore cannot be replicated by Chef Gaggan and neither can CTR replicate Gaggans’s dishes. The culture of food and tastes can change over time and some people appreciate different ways their food is presented. To each his own. I would be happy if you acknowledge the hard work, creativity and artistry that Gaggan brings to the table. I cannot afford to dine there myself but I can certainly aspire to do so someday. Criticizing the cost is a moot point.

Saya sampai sekarang tidak minat bekerja Di pejabat namun, itu sajalah Yang saya mampu. Kemungkinan hingga pencen. Wallahu'a'lam bisawaab.
