I was wondering if it’ll be alright without vanilla extract? (Online it says its just to make the butter taste richer and to make sugar taste more I guess sweeter or something. So I think it’ll be fine)

Also I have tips for anyone who may need it, if you want them to be really chewy pull them out of the oven a little sooner so they can finish baking from indirect heat. If you want crispy cookies let them stay in maybe 4 - 5 minutes after recommended time 💕

You are correct, the cookies bake for around 8 to 10 minutes. But I would start checking at 8 because you don't want them to burn. And, if they still aren't cooked after 10 minutes, I would just put them in for 1 minute increments until you think they are done. I hope you enjoyed the video!

Hi! I feel like these cookies are sweet on their own, so they don’t really need any icing. But, if you really want to add some, I would recommend a buttercream icing, which is a fluffy icing. I would not recommend a royal icing because that type of icing hardens when it dries and works better for a classic rolled sugar cookie. I hope this helps! 2 sticks is 16 T; there's 8T in 1/2 cup (or 1 stick) of butter if your sticks are 1/4 of a pound. Love that you converted this to mini muffins. I like to keep mini muffins in my freezer for lunch boxes.
