As someone who went from having for years gas to an electric flat top I can say hands down gas stoves are garbage no matter how fancy you dress them up. Faster heating times, better heat dispersion, so much easier to clean. I don’t have to partially disassemble the stove to clean food that is slowly getting scorched by flames.
I have induction and gas. I require both because they are both good, but they are better at different things. I certainly can't use my wok on my induction, but my induction gives me those perfect heat controls which is wonderful for certain sauces and other projects.
