The recipe is here: Ingredients: - 50g pumpkin seeds - 450g white cabbage, thinly sliced - 350g purple cabbage, thinly sliced - 1 red bell pepper, thinly sliced - 1 large apple, cut into thick strips - 3-4 green onions, finely chopped - A small handful of parsley, finely chopped - 1 small carrot (about 120g), grated - 2 tbsp Dijon mustard - Juice of 1 lemon - 3-4 cloves garlic, minced - 50 ml olive oil - Salt and black pepper to taste Instructions: 1. Toast Pumpkin Seeds: - Place 50g of pumpkin seeds in a skillet over low heat. - Stir constantly for about 7 to 8 minutes until lightly toasted. - Remove from heat and set aside. 2. Prepare Vegetables: - Thinly slice 450g of white cabbage and 350g of purple cabbage. - Cut 1 red bell pepper into thin strips. - Cut 1 large apple into thick strips. - Finely chop 3-4 green onions. - Finely chop a small handful of parsley. - Grate 1 small carrot (about 120g). 3. Make the Dressing: - In a small bowl, combine 2 tbsp of Dijon mustard. - Add the juice of 1 lemon. - Squeeze in 3-4 cloves of minced garlic. - Mix well. - Gradually add in 50 ml of olive oil, stirring continuously. - Season with salt and black pepper to taste. - Mix well again to combine all ingredients. 4. Combine Salad: - Transfer all prepared vegetables (cabbage, bell pepper, apple, green onions, parsley, and carrot) into a large bowl. - Pour the salad dressing over the vegetables. - Stir evenly to coat all the ingredients with the dressing. 5. Add Pumpkin Seeds: - Mix in half of the toasted pumpkin seeds. - Cover the salad and refrigerate for 30 minutes. 6. Serve: - After 30 minutes, remove the salad from the fridge. - Mix the salad well again before serving. - Sprinkle the remaining pumpkin seeds on top.
