Because packaging requirements in Canada difference... A manufacture with US made products just cant "sell" into Canada the same item.. Because packaging changes are required it increases costs and liabilities too.. so hence less "assortment" available to that country's sales channels

This is so important! Establishing metrics helps people to simply be open to changing procedures around an existing system, rather than changing a system to match existing procedures. Clear goal setting and performance metrics clarify outcomes; and create a baseline understanding that enables success and helps you find and resolve any deficiencies that naturally arise in any large system change. Place goals correctly, and everyone will be working towards the same outcomes. Don't establish clear goals, and everyone will work in random directions; the net outcome of which will be pain, loss, and spinning going nowhere. It is reasonable to say "it's a journey", it's true that discovery is part of the process, but a journey must have a destination, or it's just a drive.
Odoo is a cheap and flexible ERP. Unformatunely does not have many important features in it. The manufacturing module is not suitable for process-type Industries.
The general advice is good. However, you could have elaborated on Nike's specific situation. For example, who were their SIs, where their management could have done better?

I have been consulting on Epicor's product configurator for about 20 years and can vouch for its functionality to handle any companies configuration needs. Also to note, Epicor's core product configurator is embedded and not a bolt on configurator so configurations are created seamlessly during quote and order entry.
you are saying same thing throughout the video. ERP awareness is high in the industry. these are fluke that Gartner Sells. you cant have standardized process in Composable ERP concept. It will become monster Mainframe systems in the Banking system that they will never retire as risk is high.
