You didn’t even do that properly. You’re not supposed to drop the basket until you completely closed the lid to avoid all grease. Splatter the instructions tell you this, but nobody actually knows how to read.

The most remarkable thing about this video is the "food processor." I bought one just like it for $20, including the hand blender with two attachments and the "processor." The blender was fine, but the processor? I had the processor replaced three times, just after I bought the set, until I finally gave up. Either the lid did not fit properly or the plastic in the blade piece melted or was ground - in the course of mixing flours! So hats off to the Chef for getting it to perform for the duration of this recipe.

I do mine on a burner, in a Dutch oven, at 200 deg. for 2 hours. It became my only way to cook very tender and flavorful chicken or turkey (3 hours).

That's a Japanese vegetable knife it's not for butchering a chicken. And good job rolling over the edge of the blade by chopping and scraping with it. You'll dull a blade in minutes doing that and then chip the blade by breaking down a chicken.

Here's how to do it my way. When the time is right, cut the artichokes from the plant and trim them at the base of the flower head. Steam them for about 35 minutes. During this time, press two cloves of garlic into a bowl with a few tablespoons of olive oil, let that rest and make two simple tortillas or slice some sourdough and heat it in the oven. Get your friend to open a bottle of chilled Chablis. When the steaming is done, plunge the artichokes into a bowl of cold water with the juice of two lemons for a couple of minutes. This will cool them down and stop them from discolouring. Sit down and remove the outer leaves, scraping the fleshy bit out with your teeth as you go like a pair of Neanderthals - you don't need to add anything to the flavour - it's perfect on its own. When you get to the middle, break the hearts in two and gently take out the hairy choke. It will just come away quite easily. Loosely chop and slightly mash the hearts with the garlicky oil and spoon onto the tortillas, adding a squeeze of lemon and a little salt.
