How about this ? Vidalia Onion, red bell pepper, and lots of garlic finely chopped. Sautee all 3 till caramelized. Lightly topped shucked oysters. Add a mix of "Tabasco" sweet and spicey AND "Tabasco" Smoked Chipotle sauce equal amounts.A squirt of lemon juice, and a 1/4 to 1/2 teaspoon of 50/50 olive oil and extra creamy unsalted butter. Ok, we are almost done. Then add a squirt of Hellmans creamy Sriracha and garlic sauce. Sprinkle white pepper on top and just b4 you pull them off the grill, add crunchy green onion, a mix of the green and white parts. Conclusion..... very juicey,sweet, slightly spicy, garlicky goodness that will make you keep eating oysters this way over and over again. Note : I sometimes add finely chopped baby spinach. Either way its ALL GOOD !

Don't use knife better use proper oyster opener I have worked in Japanese village for a year. I have opened almost 10,000 oysters in a year

As being a chef, I choose opening oysters from their side (Most efficient way).
