During the beginning of my cooking journey, I remember researching recipes and I would get so overwhelmed with complicated recipes with long lists of ingredients. I wanted to make cooking simple and easy for anyone who wants to. Hence, my recipes are SIMPLE & DELICIOUS!
I've also started this channel as a way to extend my legacy in the form of recipes for my kids to have access to in the future. I also would like to share it with all of you! I hope to inspire you to get in the kitchen just as others have inspired me. I only share recipes that I absolutely love...If I wouldn’t eat it, I wouldn’t put it on my channel!
Teriyaki Meatballs Ingredients For the meatballs 1 1/2 lbs ground beef 1/3 cup breadcrumbs 1 egg, beaten 1 1/2 teaspoons garlic powder 1/2 teaspoon salt 1/2 teaspoon pepper For the sauce 1/3 cup kikkoman marinade and sauce 1/2 cup water 1/3 cup brown sugar 1 tablespoon cornstarch Directions Preheat oven to 400°. Combine ground beef, breadcrumbs, egg, garlic powder, salt and pepper together in a bowl. Roll and form about 18 meatballs. Bake for 15 minutes or until cooked through. While the meatballs are baking combine all sauce ingredients together in a bowl. When the meatballs add them to a pan along with the sauce. Bring to a simmer and cook until sauce has thickened. Serve over rice.

Pink Sauce Pasta with Shrimp Ingredients 1 lb shrimp, peeled and deveined 1 onion, diced 6 garlic cloves, minced 28 oz can crushed tomatoes 2/3 cup water 2 teaspoons dried basil 1 cup heavy cream 1 lb noodles, cooked according to the package Optional - crushed red pepper flakes, parmesan cheese Directions Season shrimp with salt and pepper. Heat oil in a pan over medium high heat and cook shrimp until cooked through. Remove and set aside. Add more oil and sauté onions and garlic over medium heat, about 3 minutes. Add crushed tomatoes, water, dried basil and season really well with salt and pepper. Bring to a boil and let simmer over medium low for 10 minutes. Stir in heavy cream and adjust seasonings with salt and pepper. Bring back to a boil and let simmer for another 2-3 minutes. Return shrimp back to the pan and remove from heat. Serve over cooked pasta and sprinkle over crushed red pepper flakes and Parmesan cheese if desired.

Red Beans & Rice Ingredients 12 oz smoked or andouille sausage, sliced 1 onion, diced 1 green bell pepper, diced 4 garlic cloves, minced 4 15 oz cans red kidney beans, drained 3 cups chicken broth 1 1/2 cups dry white rice, cooked according to package instructions. Optional - hot suave sauce or cayenne pepper Directions Heat oil in a pan over medium high heat and brown sausages, about 3 minutes. Add more oil and sauté onions, bell peppers and garlic. Season with salt and pepper and cook until softened, about 4 minutes. Add drained beans and chicken broth. Season with salt, pepper and add cayenne pepper to taste if using. Bring to a boil then lower heat to medium low and let simmer uncovered for 20 minutes. Using the back of a spoon or a potato masher, mash beans until the consistency is slightly thickened. To serve, ladle beans into a bowl and top with a scoop of cooked rice.

Creamy Chicken With Mushrooms & Spinach Ingredients 1 1/2 chicken breast 1/2 cup flour 2 tablespoons butter 1/2 onion, diced 4 garlic cloves, minced 8 oz mushrooms, sliced 3-4 cups baby spinach 1 cup chicken broth 1 cup half & half or heavy cream 2-3 tablespoons lemon juice Directions Slice chicken breast and half horizontally and pound evenly. Season well with salt and pepper. Reserve 1 1/2 tablespoons flour. Dredged chicken into flour, shaking off the excess. Heat oil in a pan over medium high heat and sear chicken. Cook until cooked through, about 3-4 minutes per side. Remove and set aside. Melt butter and add a little bit of oil over medium heat. Add mushrooms, onions and garlic, season with salt and pepper and cook for 5 minutes. Stir in flour. Gradually stir in chicken broth and half & half or heavy cream. Stir in lemon juice. Season with salt and pepper and bring to a boil. Let simmer for 2 minutes over medium low heat. Add spinach and stir until just wilted. Return chicken back to the pan and remove from heat.
Creamy Cajun shrimp and sausage Ingredients 1 lb shrimp 12-16 oz sausage, sliced 5 garlic cloves, minced 2 bell peppers, sliced 1 cup heavy cream 1/4 cup water 2-3 teaspoons Cajun seasoning, divided Directions Season shrimp with 1 teaspoon cajun seasoning. Heat oil in a pan over medium high heat and add sausages. Cook for 2 minutes. Add bell peppers and garlic and cook for 2 minutes. Add shrimp and cook for 1 1/2 minutes. Add heavy cream, water and 2 teaspoons of Cajun seasoning (or to taste). Lower heat between medium and medium low and cook for 1 more minute. Serve with crusty bread for dipping or over rice.

My kids are teenagers and this summer they ate and ate! I usually only shop Costco once a month, but this summer I had to go twice a month! Anyway I love this recipe, perfect for hot summer days when you don't feel like cooking.
