i got tighter shots that Ill use in my big video. I smoked it for 9 hours on an offset using nothing but real cherry splits. the whole thing was smoked great. BUT only drawback i have to admit is that it didnt hold together well when i sliced it
@@albert.36189 also it was fall apart. Came out like the best chopped brisket you will ever have, and yes I realize chopped brisket was not the goal lol
@@murdathaword9292 It ended up more chopped than sliced but it was moist and flavorful as hell. We are working on a video about the whole cook and if you check that out in a few weeks when it’s out you’ll see close ups of the full slice up and a group taste test with some very picky bbq friends

I was going to "roast you" from the title of the video, but after watching you did the best you could with that cut. It looks amazing and I would absolutely demolish it. I don't think your butcher is being very honest though. Sure, that is from the same muscle as picanha, but picanha has a 1/2 to 1 inch fat cap that is essential to cooking it and for the authentic picanha flavour. As for it being "wagyu", that word has lost all meaning.
@@silverf0x thanks man I totally agree with you. It didn’t have the fat cap at all. As for the Wagyu the marbling wasn’t there I was expecting, but man that beef was just loaded with flavor and had that deep red color you want
As a brazilian who had Picanha in almost every way possible, I will tell you the worst way to make picanha is on low and slow cooking. Try cooking it on high heat, over charcoal, with a nice searing and you will have the best version of picanha. You can also use a skewer, which is a very traditional way to cook it here in brazil.
Bless the algorithm! I like the idea of this concept and I bet it would also make for some great smoky devilled eggs. I think adding the smoked eggs to a classic potato salad might also be a neat idea. Take it easy, dude!
