I would recommend you start with a flat surface press control r scroll up and then pick your from face shape/design then grab all the edges Extrude move back to how thick you want it then fill and optimize and or adjust your topology manually to have more control and do everything small steps at a time
This a fantastic tutorial, I learned so much from Blender watching this video than I felt like on the Blender donut. I don't know why, but it really clicked for me when I saw how you utilized extrudes, insets, and bevels. Please do a continuation tutorial for the texturing even if its Substance Painter! I will learn it since I heard its an industry standard!

If you use the "texture' opinion near the bottom of the particle settings, you can control the particles in many ways. I would use it to make the particles get smaller just before they die. Or for fun, make them get bigger and with materials etc, make them pop like balloons.
I love little tutorials like these. I’ve made plants like this in Spore, but I want to get into Blender, so it’s really cool seeing the differences in a similar process.
