Good idea on the two hooks. I have cooked ribs many times on my Pit Barrel just using one hook per slab, so I will have to try your rotation method. Also, a good time to add the apple juice. Good video - Great job! And those ribs looked GOOD..
I'm SO glad that you liked the video!!!! I came up with the double hook method just by messing around. From previous cooks, I had noticed that if I left the same end always facing down that it would become over cooked. Through a little trial and error I was able to come up with this idea.

@michaelgautreaux3168 That's a great idea! Avocado would add a creamy texture, and jalapeno would bring a nice kick. If you go that route, I would recommend keeping the cheese a bit milder like queso fresco to balance out the flavors.
There are so many things that you can use as a binder. You can use hot sauce, worcestershire sauce, soy sauce, and I have even seen people use beef broth. Essentially you just need something that is moist and will allow the seasoning to adhere to the meat. This is backyard BBQ there is more than one way of doing things. I find it fun experimenting with different binders and techniques to see what does and doesn’t work. Feel free to do the same.
