I think I know the solution to your problem is. I have the same router. By default, this router enables a feature called "Client Steering." Which combines all 3 bands (2.4 ghz, 5ghz, and 6ghz) into one network and automatically chooses the "best" band for your devices. Based on device compatibility and network conditions. That's why your devices only show one network available. In order to disable it. From the dashboard, go to "Router Settings" > "WiFi Settings" > "Advanced" > "Client Steering." Then switch it OFF and apply the settings.

I disagree with your comment about the Linksys MR7500 router. I also own one, and for the 6 GHz band to function, your PC or phone must be compatible with it. If it's not, it's perfectly normal that it won't appear in the list of available Wi-Fi networks.

Most WiFi 6E or 7 routers from many brands have that enabled by default. It goes by different names (Client Steering, Band Steering, or Smart Connect). Keep that in mind, in case you need to disable it on future purchases.
I guess you didn't watch the video. He has tells you he has the same problem on his quest (which is wifi 6). Also he shows you his old wifi 6 router on the floor which works fine. However you are correct you do need the right equipment, which he seems to have.
Dam! Bro hit his limit with the routers. If it makes you feel any better, I got a Nighthawk RAXE300 and the 6G band doesn't show up either. That being said, I don't have any 6G capable devices so guessing this is why it is not showing up.
It's because Client Steering / Band Steering / Smart Connect is enabled. For whatever reason, most modern WiFi 6E or 7 routers have this feature enabled by default. It combines all 3 bands into one network. Connecting your device to the best available band automatically based on compatibility and network conditions. I always disable it, because it's so inconsistent. It always connects my devices like my computer and phone to 2.4ghz instead of 5ghz and 6ghz.
My MR7500 was very frustrating for months. It always said its firmware was up-to-date. Just on a whim, I went out to Linksys and found out there was a firmware that was way newer. After going into the advanced mode and installing it, it has become stable and fine. There are so many features in the advance mode. I suggest going there and seeing what there is. click on CA on the bottom of the screen like @rower20101 said. You may find what you are looking for.
