The Level 3 chef is clearly skilled, she has great knife skills and almost everything but the choice of grain was correct. The reason her dish is so disappointing is because Level 3 chefs are pushed to be innovative and fancy, and she foolishly decided to change the most important part of biryani for something more exotic and "healthy".

One thing wrong: Uncle Roger said that Chickens and Pigs are vegans. Unless in a farm that limits their diets, pigs and their wild cousins eat anything, from seeds to carrion. Same as chickens, they eat seeds, insects, small rodents, small reptiles and most of all, meat.

Stephen the Level 1 guy, he did his best, despite not having basic knowledge of Biryani. He made a cross between biryani and pulao. Rinku the Level 2 woman, she did kacchi biryani, a version not known in Pakistan nor India, but in Bangladesh. She used seafood, that wasn't commonly used and uniquely used in Bangladesh and in sometimes, in South Indian coasts. Danielle aka Level 3 woman, yeah, she doesn't made biryani, she made beer-ani, and doesn't use rice, but freekeh. She made the rivaling South Asian nations unite against what she did.
Jamie Oliver does anything to p off people. And the reason why Nigel Ng was assaulted, was because at that time, paranoia, racism, xenophobia and COVID fear was beginning to be strong. And any Chinese or Chinese looking people were generally avoided or openly mocked.
Cowboy Kent Rollins was really reviving the old era camp cooking for those cowboys who raised those cows on that ranch. Besides his old large wood-fired stove, he had the wagon and most of all, his trusty cooking utensils and know-how. His energetic approach of cooking coupled with cowboy jargons, his cooking knowledge, his efforts, and his accent made him fun and informative to watch.

This HAS to be scripted. the more I see these kind of cooking videos the more I tend to believe that these 'professional' chefs simply DON'T even KNOW how to cook at all. if they can't even get the basics of their dishes down.
