Yes... you could substitute the eggs with condensed milk or curd or applesauce

You could cut down the white sugar ... can add up to 1/2cup of condensed milk... other ingredients remains the same..

If you want to prepare the cake immediately you can refrigerate up to 15 - 20 minutes and then frost the cake... or you can make the ganache day ahead and keep at room temperature
