In 1980 was 13years old and spend my holidays at Barbados. On a night show at the hotel a friend of my mother let me proof the rum punch. Now in 2024 i remembering that drink. First i made a bottle of syrup. Put the rest in a can added syrup and what a taste mjam mjam like 40 years ago. Love Bajan Rum Punch

As a child of St Lucians I was raised on Cocoa Tea. I now make it for my family and my children love it. We have never ever used custard powder in it, though there are many variations traditionally it is always thickened to your liking with flour and water. Custard powder is made from cornstarch and eggs. I can guarantee you that the locals merchants in Castries, Gros Islet, etc do not use custard in their cocoa tea because it is an expensive additive. Thicken with cornstarch if you will, but please DO NOT say St Lucian's make Cocoa Tea with custard. That's blasphemy! And by the way, we use essence in our Cocoa Tea, like banana and vanilla. Our traditions are our heritage they are all we have, please be respectful of them.
I had lemon grass tea, had some sleep and wake up thinking about bayleaf and lemon grass together as a tea . I google the two and up it come, lemongrass & bayleaf . When the guy begin to speak , i say within, he is from ( BARBADOS ) i am from (BARBADOS) Earl Worrell , living in AMERICA . Thank you .
My neighbor is from St Lucia and she just brought me back 2 bars of cocoa, so based on your instructions I am going to try making St Lucia cocoa tea. Will let you know how I made out. I am from StVincent
Rum Punch Rhyme One of sour, Two of sweet, Three of strong, Four of weak. A dash of bitters And a sprinkle of spice, Serve well chilled With plenty of ice. Though ice cubes serve as the 4 parts weak, as far as I’m concerned.
