You don't have to, the rind is edible. You can if you really want to though.

Amazing Recipe --- Can it be prepared, baked ahead and then reheated in the oven the next day? If I'm taking it to a friends' house and won't be able to use their oven

Never made this before so have looked at dozens of videos. You have one of the better made because of its precision. One video suggested taking rind off. Wondered how you felt about that?
