It is very important to note that if you do not consume animal fats and very small amounts of extra virgin olive oil and zero vegetable oils, then the insulin can bring the sugars/starches/carbs in to your cell receptors to be utilized. Otherwise, fat blocks the cell receptors and this then raises your blood sugar because it has no place to go. EAT VIRTUALLY FAT FREE. SUGAR IS NOT THE PROBLEM, FATS ARE.
I suggest you look up Dr Benjamin Bikman. Mountains of very good research and evidence for the benefits of a high-fat diet, specifically the way it helps control insulin levels.
You are right about not using vegetable oils, the processing damages the oils and they are high in linoleic fatty acids. But good olive oil or butter will slow glycemic index. If you have a good balance of good fats with linolenic omega 3 fatty acids, then you will not have a problem with some animal fats.
