He may not have deliberately took inspiration from FlexN. He may have followed his own path and crossed into it unexpectedly. But what he's doing is called the Get Low in Flexn. Sage is top tier at it. So if you like this you'd love Sage.
use Heavy grade tinfoil instead of the cast pan,,,and you can pierce it to get what ya need,,,I have gotten into useing saw dust for smoke,,,once you learn it I find it better than chips or chunks,,,
Put a couple of pieces of rebar across the opening & it works the same as the supplied woodchip pan, but the wood only smolders instead of igniting. See the video I posted the URL in my comment
I have the same smoker and love it. I put caster wheels on it so it can be moved around easily. I also had the heat control problem. I make alot of snack sticks and need the heat to be less than 200 for most of the time while making the sticks. I bought a small brass shut off valve and installed it in the gas line. I can now get the temp down to 100 deg.
