Welcome to The Biggs Homestead Kitchen! Here, you will see videos all about canning, cooking from a prepper pantry, preparing fresh dishes from the garden and so much more. I invite you in my kitchen every week to meal plan. We will prepare delicious gluten free meals on a budget combining long term food storage with fresh ingredients. I share my grocery hauls and all the busy things that come with homestead cooking. I love to update vintage recipes from the Depression and wartimes by giving them a gluten free twist.
I live in the middle of the Ocala National Forest in sunny Florida USA. I have a tiny homestead with chickens, dogs, cats and a huge garden. Don’t forget Mr Biggs too! Buckle up for the occasional garden haul video.
I am very new to gluten free foods, you look like you are well stocked, I need to get use to this new way of eating and I guess I would keep watching your videos. I like to do canning when I can. I am cleaning out my old food from my pantry and donating everything to our food pantry. Soon I well continue restocking with healthier food in my pantry. This is a true research job. I can’t believe that I have been suffering for more than 20 years with stomach problems, unbelievable. (Sometimes you have to take care of yourself). I haven been doing a lot but if you can give more support I would greatly appreciate it.

I am a really bad celiac. For years I made everything from scratch and it was so hard. I gave up and just ate whatever I wanted. Sick sick sick! In May, at my bestie’s daughter’s wedding the beautiful bride insisted I go hard core GF…and Disney was a great way to start. I’m now GLuten Free. Love GF catelli pasta and Promise bread. And PC waffles. And Lettuce wrap teen burgers from A&2. I’m in Canada. Makes life so much better. And I feel so much better!
6/1/24 - I opened up a container of Ball lids that I bought about 3+ years ago. I don't buy them anymore because the sealing compound is smaller than in the past and I feel they are thinner. When I couldn't find any during the first canning season in 2020 I purchased another brand. The reason I am writing is because these all had black marking on the top like acid had tried to take off the metal but my jars all sealed well and my chicken didn't siphon. I tried researching why this might have happened but your video is the first one where your Ball lids look like mine. Do you happen to know what causes that black discoloring on the lids?
I just did ABOUT 75 Quarts of chicken last week. I had 1, ball (possibly Kerr) BUCKLED. - sealed, I am leaving the ring on, agree, won't trust long term. But, even good ones buckle. Btw: grandma went through the depression, and as a result she REUSED lids a second time. (Not 3 times though) And of course she would pull RINGS off, and reuse them every batch.
I got great value lids once and they buckled. Pur rings do not fit the threads on our regular canning jars. So dont buy them. I used the pur lids that that i got with the the rings. I threw out the rings. Ill the pur lids sealed but well see if they stay that way. I will keep getting ball and golden harvest. They always work.
Hello! Do you have a recipe for your potato salad with diced canned potatoes? I'd love to try that. I just subscribed and look forward to watching other videos.
I just made plum preserves and the only canning lids the store went to had was pur. I was like Oh man what do I do but all this fruit was going to go to waste! I live on an island so I only get off once a week. Okay I've used the oldies but goodies from way back... First time I've ever had to use an off-brand. Like you I was curious they were thin... I just pulled out 10 jars full of plum preserves and as they were coming out of the canner, they were sealing instantly. They just kept going pop pop. I checked them and they seem to have a nice tight seal! After they sit overnight I'll check them again but I don't see any problems. There was no bulging, all 10 sealed properly. I'll check them again tomorrow.
I keep a fork in my bag. If I’m away from home, and without snacks, I go to a grocery store, pharmacy or dollar store and buy a can of fish with a pull tab opening. It’s a great protein option to keep me full for a few hours with no sugar rush/crash.
I’ve NEVER had a failure with Denali lids, and I’ve used well over 100 of them this season so far. I’ve had failures with both Ball and ForJars seals due to insufficient width of the gasket (Ball) and too thin gasket material (ForJars). The Denali lids I purchased are thicker and have wider baskets and they don’t look like the ones in your video. I suspect they are not actually manufactured by Denali. My other favorite brand is Superb…another lid with wide, thick gaskets, and I love their distinctive “pop”! Also, how much did you tighten your rings?…any seal will buckle if the lid is screwed on too tightly.
This was so amazing! You inspired me to go thru my freezer and I found things from almost 2 yrs ago . I am not at labeling 😂 Thank you for doing this video and inspiring me and no food waste on your channel I love it! Your the best and you are not alone at all. Best real life and relatable video on utube ❤
Thank you so much for this video! I made a salad and due to a storm that came by about 2 weeks ago I forgot I threw out everything in my fridge cause we lost power for 20 hours!! I had no salad dressing. But I made the Parmesan one! Love! ❤️

Catching up in your freezer challenge videos because I’m needing to do one. I giggled every time you said “I have NO CLUE what this is.” 😂 You are not alone in the dis-organization. 😂 I need to defrost my freezer I think. So I guess I have a huge project for the next month or so. Watching you get all organized is exciting. The freezer looked great after you got it all organized 🎉 I think I will Use different colored bags like you did.
Hi Cynthia, I hope all is well. I'm going to put on my winter coat and go for a hike to the back forty tomorrow to break up some dirt for my garden. It's still pretty cold up here in Wisconsin. We get a few nice days and then we get a burst of winter. It can't stay cold much longer, right?
