in 1:59 how did you scale the loop cut that way? I know u can double hit "g" to slide a loop cut, but you did it to both simoutaneously equally to each side, even with the shortcuts on display I couldn't get it
Sometimes the shortcuts get skipped when pressing two keys at the same time. What I did was press S to scale, then X to scale along the X-axis. So whenever you want to scale loop cuts equally in any direction, you can use S + the axis key (X for the X-axis, Y for the Y-axis, and Z for the Z-axis)

should I get my own living room ref img and follow along with that or is there a way to get the same you're using? I can do both, it's just that I can't find it in the description, is it inside the addon zip file? I'm not complaining, just to make sure that's the idea or I'm misunderstanding it somehow.
