Welcome to boatbuilding. I've built a few S&G kayaks and more recently a Portage Pram from Duckworks. What I've found works well is to leave the plank stitches loose, very loose, until it comes time to get the various bulkheads in place. Remember that the kit you are building is one of hundreds that have already been built, the pieces are right even if your technique isn't. Get the bulkheads/transoms in their respective places on the first couple of planks and start "massaging" the whole mess together. Trust the bulkheads....at least in this case. I once built the first kit in a series and one of the panels was actually the wrong shape (incorrect coordinates had been sent the the CNC machine) but in the case of the Nesting Pram I think those have been worked out.
I have that kit as well and am finishing the build this spring. I did enjoy your video. Regarding the "extra" part you could not identify; I have the same part in my kit. It is part of the dagger board trunk plug that connects to the plug cap when NOT using a dagger board. Those two nibs in the part will match up with the holes in the underside of the cap. Hope that helps!
