Wrapping ribs is basically steaming them, not smoking them. Not to mention it ruins the bark. Unwrapped will produce better, more flavorful ribs every time.
Most of the Smoke is absorbed early on. Harmless to wrap at that point as most all of the flavor and bark is already there. But there are many ways to smoke ribs every does what works best for them with their particular setup.
@@cbaur88 the steaming that takes place afterwards in the foil is what ruins the bark that is created in the first few hours. It’s really not that hard to understand.
@@whereRbearsTeeth you said it wasn’t smoking them so which is it? Now it’s ruining the bark!? Definitely some validity to ruining the bark wrapping with foil but it’s not that bad in my experience and you can wrap in butcher paper to lessen that. My point is you get plenty of smoke in those initial few hours.
