Clarification 1:: To clarify, the beetroots I used were pre-washed and had no soil on them. I still washed them thoroughly before peeling and chopping, and again after chopping. My hands were also thoroughly washed with soap and water off-camera, and the cutting board was sanitized. I assumed some of these steps were obvious, which is why I didn’t show them on camera. Thanks for the tutorial! Do you know if I can do this with blue corn? I tried to add some to my instant pot for taco soup and pressure cooked for 2 hours and 15 minutes total and it was still a little hard on the outside (they had burst open. Could this have been from the salt I added before like you mentioned? I added the corn to the IP after everything was seasoned
It's a pleasure! . This is the first time I am hearing about blue corn, I suggest you try to cook the corn without the salt. You can add the salt once the corn is cooked (soft). All the best!
When you are fermenting the mealie-meal, you can use tap water (at room temperature). When you start cooking it then you will need boiling water. I hope you enjoy the sour mealie-meal porridge! Blessings 🙏

We soak dry corn and then boil it. The corn softens during the cooking process but make sure you don't add any salt before it's completely cooked - - salt hardens the corn, beans and samp during the boiling process.

I soaked the dry corn for 1 night. If you are in a hurry, you can also soak the dry corn in boiling water (soak them for at least an hour). I fried the boiled, drained and cooled corn.
Yes, it should work fine. Remember to grease the pan well. I have never tried this recipe in a conventional oven hence, I can't advise with regards to the temperature and "baking" time. I'd use a moderate temperature and increase the temperature accordingly.
