This is a delicious pie made using quick puff pastry that is perfect for a family treat or any special occasion. It's hard to imagine how delicious it is until you try it. The recipe provides the easiest method for making the puff pastry dough, which can be found on Cookido. Simply mix all the ingredients, including frozen butter, for 20 seconds at speed 6. Then roll out the dough and shape it as shown in the video. The beauty of this technique is that you only need to do it once, unlike the traditional method that requires multiple rolling and folding. Also, there's no need to place butter in the middle layer because the butter is already mixed with the dough, resulting in the same flaky texture as traditional puff pastry. The pie recipe is also available on Cookidoo. It is made with kale, potatoes, and celeriac, and turns out incredibly delicious. Ever wondered what would happen if you swapped traditional fillo dough with Moroccan Msemen dough? Introducing my video: Crispy Moroccan seafood bastilla with a twist! I used Moroccan Msemen dough instead of fillo dough, and the result? Simply amazing! The layers of flaky Msemen dough, infused with spices, encase a delectable seafood filling. Join me on this culinary adventure packed with flavors and textures that will leave you wanting more. Dough Ingredient - 400g of flour - 350g of all-purpose flour - 440g of water - 1 to 2 teaspoon of salt - 1 tablespoon of sugar or honey - 1 teaspoon of yeast Preparation: 1. Add all the ingredients in the Thermomix using the scale function. 2. Select Thermomix dough function and Knead the dough for six minutes. You can check the dough after the first minute and add more water if needed. 3. Divide the dough into 8 balls. Place the balls on top of each other, applying ghee (melted butter) and sprinkling some fine semolina in between. Stuffing Ingredients ( Moroccan seafood Basstila stuffing) 250 g of squid 250 g of peeled shrimp 100g g scalop 100g Oyster 500 kg of white fish 250 g of fresh mushrooms (sliced) 1 bunch of parsley and coriander 5 cloves of garlic Juice of 1 lemons ½ preserved lemon 1 tablespoon soy sauce (optional) 1 tablespoon Oyster sauce (optional) 50g of olive oil ½ to1 teaspoon of salt 1 teaspoon of paprika ½ to 1 teaspoon black pepper ½ teaspoon of chili powder 1 teaspoon of turmeric 1 teaspoon cumin 1 tablespoon Moroccan harissa ( preserved hot pepper) 250g g of rice vermicelli 300 g of water 100 g ghee or melted butter FISH PASTILLA Stuffing PREPARATION: 1. Place parsley, coriander, garlic, lemon juice, preserved lemon, harissa, soy sauce, oyster sauce, salt, and spices in the mixing bowl and blend for 3 seconds at speed 7. 2. Take 2/3 of the marinade and marinate the mushrooms and seafood (shrimp, squid, scallop, oyster, white fish); reserve the other 1/3. 3. Divide the mushrooms and seafood between the steaming basket, the Varoma, and place the white fish on the Varoma tray. Then pour some oil on each of them. 4. Pour 300g of water, insert the seamiring basket, close the lid, place the Varoma dish and the varoma tray, and cook for 15 minutes/Varoma/speed 1. 5. Once done, remove the Varoma dish and tray, as well as the steaming basket, and soak the rice vermicelli in the remaining boiling water from the mixing bowl for 10 minutes. 6. Drain the vermicelli and place it back in the blender. Blend for 3 seconds at speed 5. 7. In a large bowl, mix the vermicelli, mushrooms, seafood, and white fish with the remaining marinade. Allow the stuffing to cool down. 8. With the help of some oil flatten the msemen dough pile at once into a rectangular shape, as shown in the video. Apply some ghee (melted butter), then sprinkle some fine semolina. Roll it as shown in the video. 9. Cut the roll into 1.5-inch pieces using a kitchen thread. 10. Flatten each piece and place the Bastilla stuffing in the center. Fold it as shown in the video. 11. Line 4-inch oven pans with parchment paper. Place the small msemen Bastillas inside and apply some ghee on top. Alternatively, you can place the Bastillas on top of a large pan with parchment paper. 12. Bake at 180°C (350°F) until golden on both sides. 13. Introducing Spinach Moroccan Harcha: a delicious culinary masterpiece! . It's easy to make and incredibly satisfying. Don't miss out on this delightful treat. Ingredients: 220 g plain yogurt 100g spinach 400g semolina 60g olive oil 1/2 tsp baking powder 1/2 tsp baking soda 1/2 tsp yeast 60 g cream cheese 1 tsp salt 1 onion ( about 100g) 1 Bell pepper ( about 100g) 1 hot pepper Preparation steps: 1. Place semolina and 30g of olive oil in the mixing bowl, then mix for 10 seconds at speed 4. Set aside. 2. Place the onion, bell pepper, hot peppers, and 30g of olive oil in the mixing bowl, then chop for 5 seconds at speed 5. 3. Cook for 10 minutes at 250°F/speed spoon. 4. Add spinach and chop for 5 seconds at speed 5. 5. Cook for 1 minute at 250°F/speed spoon. 6. Add yogurt, cream cheese, salt, 1/2 tsp of baking powder, 1/2 tsp of baking soda, and 1/2 tsp of yeast to the spinach mixture. Mix for 10 seconds at speed 4. 7. Add the semolina mixture and mix for 10 seconds at speed 4. 8. In a hot non-stick skillet, apply a little oil. Pour a little batter about 4-5 mm thick and quickly spread it by pressing with a flat spatula. Cook for 8-10 minutes on each side. Serve immediately. Moroccan Msemen Dough Ingredients - 400g of flour - 200g of all-purpose flour - 350g of water - 1 teaspoon of salt - 1 tablespoon of sugar or honey - 1 teaspoon of yeast (You can use 300g thin semolina and 300g all-purpose flour) Preparation: 1. Add all the ingredients in the Thermomix using the scale function. 2. Select Thermomix dough function and Knead the dough for six minutes. You can check the dough after the first minute and add more water if needed. Ingredients of the Moroccan stuffing - 200g of colored bell peppers - 300g to 400g of onions - A bunch of coriander and parsley - 30g of olive oil - 2 tablespoons Moroccan "khlii" fat or lamb caul fat (you can use more if desired or you can skip it) - 1 teaspoon of salt - 1 teaspoon of black pepper - 1 teaspoon of paprika - 1 teaspoon of cayenne pepper (optional) Preparation method: 1. Chop the coriander and parsley in the Thermomix for 3 seconds at speed 7. Transfer them to a small bowl. 2. Add the bell pepper to the mixing bowl Chop for 3 seconds at speed 5. Add 15g of olive oil and 1 tablespoon of the fat. Sauté them in the sauté function of the from Cookidoo for 12 minutes. Remove from the bowl. 3. Add onion and Chop for 3 seconds at speed 5. Add 15g of olive oil and 1 Tbsp the fat. Sauté them in the sauté function of from Cookidoo for 10 minutes. 4. Combine the sautéed onions with the bell peppers.
