Tourist hospots like all major cities and islands in dalmatia and istria are for the sea and vacation, not for authentic cuisine.
very different way of making it from what we're used to in South East Asia...I noticed most European style whole roasts don't give emphasis on the skin coloring as much, is this a pretty common way of cooking over there? legit question...I love the cooking contraption though...that would be amazing for making Lechon.
