just purchased 2024 gmc canyon elevation 2WD- Only have about 120 miles on it - notice the Oil temp gauge is a bit above mid range and transmission oil same - is this OK/normal for this engine?

This particular vehicle looks like it is being driven by a slob. I know some dealers will drive demos for the first few thousand miles and not title so they can still sell the car as new. This vehicle looks dirty and used. Have a little more pride in the product you present to your customer.
