Arriving in Thailand 18 years ago. I immediately fell in love with the place, people, culture, the country, and most of all, the delicious food.
Started a business with my wife - Curry-Nights making British Indian Restaurant ready meals, and personally cooking 400 meals a day we supplied all leading supermarkets throughout Thailand and into Laos.
A lover of street food, home-cooked food, and good laughs, I believe that there are undeniable bonds and friendships in cooking with other cultures.

It’s taken me many years to realise that I don’t like eating bananas, but him indoors loves them so I’ll be kind and make a tea time treat - and it’s not even his birthday! (I can’t abide hearing people eat bananas but Australian fruit bats chewing on a chunk of narnie is adorable - yes I know I need to get out more.)
My loaf is in the oven now Rik and smelling delicious , my bananas didn’t quite add up to the amount in the ingredients so thanks to your lovely subscribers who said they were going to use apple sauce to replace the banana iv topped mine up with my homemade apple sauce and can’t wait to see how it turns out , 👏🏻thank you xx
Rik like you any potato will do what I don't do is mix batches due to different cooking times ...same as knife always square off first saves knife accidents and helps with keeping chips same size
I love the way you toss the patties between your hands like I do with my salmon patties! No one ever taught me the technique. It just came natural. I'm going to try this!! I won't ruin it with ketchup tho... I'm thinking a dollup of sauerkraut on top! 😊 Thank you for posting!!
You could really add anything to this to improve on it. Chopped fried onions in the pressure cooker or garlic and or chillies after you’ve blended it. The possibilities are endless. But you have the good old fashioned corned beef as you’ve taken it. Fantastic video.
Parsnips are a good substitute for the carrots. They release less water, and have a slightly medicinal taste that goes well with the beef and tomatoes.
No disrespect intended, certainly not knocking your skill in the kitchen, (seed oil/marge a no no in my world ). However maths not your strong point as a 20% or 25% reduction of 180 is 144 or 135.
Lol. I found it interesting he was wearing the same clothes after the 48 hour cureing time. Interesting recipe . I think I'll try it....but how do you pressure can it in the end?

I use the same recipe throughout the year but bake it into muffins, which I like to eat for breakfast together with coffee and a yogurt. Now that we are into fall, I vary this recipe by substituting a can of pumpkin puree for the bananas. Just add your usual cinnamon, cloves and nutmeg spices. Viola! Pumpkin Spice Oatmeal Loaf!
Yes to more food videos!!! I made an enchilada casserole doing exactly like you mentioned in this video, copycatting a frozen dinner that looked particularly yummy...for $7.99. I made a whole casserole, 8 servings, for $3.71.😅 I try to eat on $25 a week so any tips or tricks are super helpful.
Talking about being creative and inventive!? I stumbled by your channel by accident and I'm binge-watching your videos. Had to subscribe. Really appreciate your humor and straightforward content. The use of "mixing" bowl had me bowl-over (no pun intended, it just happened LOL). Thank you so much for sharing. I really like Oriental cuisine but it's hard to cook on electric range. I just steam each vegetables separately then do the rest like you have done using....cast iron or frying pan. I'm going to try your method with a bowl 🙂
Top shelf bisto best gravy and branston pickle, 2nd shelf 3 tins black treacle and 1 tin of golden syrup, can't find the Yorkshire tea bags though Rik 😂
Looks fabulous, Rick. Glad to find your channel. Too expensive now in States to eat out, but I'm learning from RU-vid Chefs like you to make this stuff at home. Too easy & much cheaper.

My dad made the best corned beef hash. Corned beef, creamy mashed potatoes with lots of butter and white pepper, a few spring onions finely diced, all mashed together , covered in cheddar and baked in the oven until the cheese was bubbling and starting to turn brown. Eaten with loads of Branston Pickle. Bloody lovely.

My kids always called St. Albert’s cheese curds , from just outside Ottawa Ontario, “squeaky cheese”. Ridiculously expensive, going to try to make yours.
