For anyone who haven’t worked in a restaurant you make more than you’d think you need just in case of an unforeseen error like staff dropping a portion, one may be overcooked or too small a portion. They’ll sell about 120 ribs but made 130 ribs just in case. Restaurants like people don’t have hindsight
Keyword is word ABOUT, about is not an absolute number, it's a rough idea. Some days they could cook more some less, most likely depending on the day of the week it is.
Its probably cause the overnight guys are only doing meats and the day guys do meats sides serving and prepping actual plates. Much easier to cook bulk when you have no customers and only focus on cooking
