Для безопасности рук лучше прижимать нож к столу с помощью какого-нибудь узкого деревянного бруска с пазом под нож. Вращение шлифовального круга на лезвие ножа вниз, чтобы не заваливать кромку лезвия и не вырывало нож вверх. Автор так и делает. Работать обязательно в защитных очках. Угол заточки будет зависеть от диаметра шлифовального круга. Да, заточка станет немного радиусной, но это не принципиально. Чтобы нож не перегревался, нужна очень малая подача, как это и делает автор видео, т.е. искр должно быть очень мало. В любом случае диаметр шлифовального круга подобрать таким, чтобы примерно сохранить первоначальный заводской угол заточки. Торец шлифовального круга предварительно выровнять, например, с помощью победитовой или алмазной правки. После заточки обязательно немного шлифовать обратную полоскую сторону ножа на наждачной бумаге на стекле, чтобы убрать заусенцы на обратной стороне режущего лезвия. Шлифовальная бумага 600-800 грид достаточно. Лучше отдать ножи на профессиональную заточку.

Watch your fingers. Perhaps use a top feather board for safety reasons. Great idea but doesn't it change the cutting profile (angle) of the blade?

While I am glad this works for you, it would be very unsafe for many users who may be less proficient than you, my advice is to take it down before someone fails to do it right and hurts themself, then sues you. Just my 2 cents though…

It does look to me like he's put the fun and danger back into woodworking. He, he. This technique is not for me. I'm probably skillful enough to do it, but I'm not risking my fingers.

That is all together a horrible idea. What is the RPM of the motor of your saw? How are you going to guarantee you get the exact correct angle on the planer blade? Heat buildup is very important to avoid so you don't lose the temper in the blade. All these questions, inquiring minds want to know!

Everything you said plus the fact that a grinding wheel meant for a hand grinder doesn't come in a high enough grit to give a clean edge. I noticed a lot of little chips on on the blades edges @ 2:00, which of course will transfer to the work piece, maybe that's why they didn't do a demonstration after "sharpening". I'm all for DIY, but sometimes you just have to bite the bullet and spend a few bucks.

Speed will not create heat buildup! Heat buildup is linked to the amount being removed in a single pass, multiple light passes and it'll stay cool
