I'm in love with this recipe... because I'm crazy about vegetables, and CHEESE... and love spinach and cheese together. I used to eat spanakopita as a child and loved it! I'm certain it was the first time I'd had feta. And phyllo!

I make these cookies every Christmas. LOVE THEM!!! Because they are rolled into spheres and then rolled in sugar they remind me of Snickerdoodles... so I call my cookies Gingersnoodles! haha
