Certainly…the end-of-season goat milk runs around 8% butterfat or more, and commercial cheesemakers routinely adjust fat content for their recipes by skimming or adding cream. I don’t know what ratio of cream/milk you would want to use, but I imagine it wouldn’t be that much. If you try it, let us know how it went…I’m glad you like the video!
In this case, more fat will make a tastier cheese, so I’d encourage using whole milk. Cow milk will make a slightly more fragile curd, and you will have slightly lower yield, but it should still be good. Let me know how it turns out!
Yes, if you’re doubling the recipe. The water is not an active ingredient in the whole show, but it makes it so you can more easily and evenly disperse the rennet throughout the pot.

I cannot imagine that I have played this wonderful piece, too - many years ago. Thank you very much. I try to play it again,but it will cost me a lot of time., because I did not play for many years. Your dog is wonderful, my two dogs love the piano,too.
A nice little set (though I think no.3 is weak, but no.2 is gorgeous), excellently performed. Pity about the rather arid and in-your-face piano sound. It seems a good instrument but could be better recorded. Anyway, thanks for posting these (and nos. 4-6 where the same comments apply).
Delightful piece, delightfully played! Always a pleasure listening to you play. Keep up the good work. If you want to attempt something both schmaltzy and romantic, try Schubert's Fantasia in F. It's long and needs 4 hands, but I know you would do a great job with it.
Don't underestimate feeling. That phrasing is lovely .... and the pedalling so discreet I had to carefully watch to make sure you were using it at all. Beautiful performance!
Hey don't underestimate yourself. This is charming and one of the best versions on You Tube. I don't find it in the least overplayed .... in fact I'd suggest you watch a couple of clips of Lang Lang and really get into it. Throw your arms and body around a bit. As a student many years ago, I was repeatedly chastised for too much body movement. Now .... heck with Gould and Lang Lang, we're liberated. It's a fun piece! And your little furry audience is a delightful accent!
