The UN (United Nations) recognizes 193 member nations and 2 non-member observing nations (Vatican City and Palestine). Other places sometimes considered countries include Taiwan and Kosovo (recognized by the US). Since this quiz says 197, they are likely using all 193 UN nations, both observing nations, and Taiwan and Kosovo. (With the benefit of having seen the whole video, they ask about both Taiwan and Kosovo, so they are definitely counting then).
