Hi, friends! I'm Mindy, welcome to my channel! Here I try to encourage, inspire, and entertain by giving you a glimpse into this busy season of family life. My mission on SeeMindyMom is to be kind and helpful; my platform is a place where families can find genuine encouragement, practical strategies, and realistic inspiration. We aren't perfect by any stretch of the imagination, but we try to lead a joyful life full of generosity, kindness, and love. Come along for the ride!
I would never buy it in a jar. No comparison and so easy. This sauce is just as versatile as any marinara or pesto. It's 💣 in a white lasagna w/ Italian sausage & spinach. Carbonara method is great too for any pasta accompanied. There's just no other way than homemade on this sauce.
the recipe I use for Greek Dressing ¼ cup red wine vinegar 2 cloves garlic, minced 1.5 teaspoons each oregano and kosher salt 1 teaspoon or more Dijon ½ teaspoon each freshly ground black pepper and honey ½ cup EVOO Shake to combine all together. If using cruet, add vinegar to V line, then all remaining ingredients except oil, then add oil to O line. Shake to combine.
This made me feel good about my family's grocery budget for a family of 7, the youngest being 15, we spend decently lower than that per person per day, and we eat really healthy. Here I thought I was overspending.
I love a new Mindy video! I totally get why she cut back for the summer, but I definitely miss the new ones. I’m a bit newer to watching her content, so I went back and started to watch all of her other videos. I love them all, but especially the pantry use it up ones. It’s something I feel like I’m always doing. I’m also really loving the ones like this one where she pulls an old video and sees how compatible it is today. I’d really like if she would do a video on how much of each items she keeps in the house. I struggle with keeping too much of certain items. It’s probably from the shortages from Covid and I’d like to know how she finds the right balance.
I'm actually putting out a new video next week that talks a little more about our household in the summer and some things we're doing. Including cutting back a little on content. It's just the season my family is in, it's hard to carry on with the same productivity in the summer. The Pantry challenge videos are a favorite of mine, too, and I try to do them several times a year. :)
As a kid I ate everything except licorice and banana smoothies. I hated everything even remotely licorice-y. I liked bananas but cannot stand banana flavoured drinks. This is coming from a kid who ate paper, bugs, literal mould, dirt, habenero chillies and other questionable things.
Love the fast healthy and surprisingly high-protein meal ideas here, thanks! ❤ PS - I did a closet purge last month, and got rid of a couple kimonas - and now I regret it because yours looks adorbs in shorts and t-shirt. I never think to mix things like that.
Oh thank you! I've had that kimono for like 6 years. LOL. I keep wearing it every summer so I haven't gotten rid of it. I don't care if it's in style, I love the color and it's super lightweight, so it's not hot to wear in the summer. :)
You always give me such good ideas. My favourite videos are pantry use it up type things. I think I a going to make that pasta chick pea salad tomorrow. ❤❤
You have great ideas. The only problem is here in Phoenix everything is sky high they took away the dollar stores where you could get somewhat cheaper things and then you have the recalls happening of some of these cheaper things sometimes when you go with the great value items I know I've bought pairs in a can for two dollars $1.78 at Walmart and you open it and there's a stem in there so now I've opted to look for a cheaper fresh food item or The namebrand item but it's almost literally impossible. May your kids are small yet I guess and it is possible for you I'm happy for you but in my situation of people that live here in Phoenix it's not that possible anymore to buy $100 worth of food and feed everybody.
Thanks for the video. I’m curious why protein is a frequent metric of ingredient quality in your budget videos. Most Americans eat sufficient or excessive protein while few eat at least the recommended daily allowance of fiber.
Because people often equate the amount of protein in a meal plan to the satisfaction and feeling of fullness. If I don't point it out, people think it's "nothing but carbs" just because there isn't a lot of meat.
